EARLY HARVEST
For finishingPicked early in the season when the olives are still green. This produces an intense, complex oil - grassy, peppery, with a noticeable throat tickle that signals high antioxidant content. Best used unheated: drizzled over food, in dressings, or for dipping.
Notes of tomato leaf, fresh-cut grass, bold peppery finish.
LATE HARVEST
For cookingPicked when the olives are fully ripe. The result is a smoother, milder oil with excellent heat stability - perfect for frying, baking, and sautéing. Picual olive oil is naturally resistant to oxidation, which makes it one of the best olive varieties for high-temperature cooking.
Notes of ripe olive, oregano, mild nutty almond, gentle pepper warmth.

HARVESTED
Olives are picked at the optimal moment - either early season or at full maturity, depending on the oil.

PRESSED
Cold-pressed within hours at the mill in Jaén. Temperature never exceeds 27°C. No solvents, no additives.

Every batch is lab-tested for acidity, polyphenols, and purity. Only oil that meets superior category standards is approved.

BOTTLED
The oil is filled into practical PET bottles that combine protection, precision, and ease. Each bottle is then sealed and labelled before being shipped to Sweden.
